Parmesan Tilapia



I made some crusted tilapia from this recipe. I replaced the bread crumbs with a 1/2 cup of almond flour, worked great! I only wish I had a lemon wedge to squeeze on top.

Smoked sausage and sauerkraut soup

I made up this soup with stuff I had on hand. Leftover broth from two different crockpot roasts, various veggies, some chopped smoked sausage and a jar of sauerkraut. Super delicious!

Cream of Chicken Soup





For dinner tonight on this dreary, rainy day, I made Cream of Chicken soup from Linda's Low Carb website. I added collard greens and mushrooms and used a bit less xantham gum. Turned out fantastic!

Zucchini and Sweet Potato Hash




Eggs over medium served on top of some Zucchini and Sweet Potato hash, which is just simply those two vegetables thrown through the food processor and then fried in butter on the skillet.




This is the same pizza recipe except I roasted from poblano peppers and threw them on top. I seriously have made 4 of these pizzas in the last two weeks.

Orange chicken and "faux-mein"



I have had this reddit recipe saved for awhile and today I was mad craving some chinese food. So I thought I would finally give it a shot. It was not disappoint. Even with sugar free marmalade this was fantastic, definitely satisfied my craving! I did use tamari instead of soy sauce, which tastes the same.

Home made pizza !



This recipe popped up on reddit, I was craving pizza and I wanted to make a small one to curb that craving. This was perfect! Super easy to make and was delicious. I added mushrooms and some green olives to mine as well as the pepperoni.

Super Easy Chili



Just yesterday Melissa posted a new recipe on her blog, "I breathe, I'm hungry" for a quick and easy keto chili. I had almost all the ingredients and I wanted to make something quick. Turned out really fricken good.

Also regarding yesterdays soup, it wasn't just pretty good, it was f$%#ing amazing.

Cheap-ass meals.

I'm totes broke so I'm trying to be thrifty with my food. I made some peppercorn burgers, and some grilled cheese with almond bread and bacon. Served with a helping if sesame stir fried broccoli.

Burger with Kerry gold aged cheddar, topped with peppers and an egg with a side of home made coleslaw.

Italian chicken sausage in fire roasted tomato sauce

Nothing fancy tonight, just some cooked Italian chicken sausages in a Classico sauce with some sautéed peppers and parm. Pretty good for a quick meal.

Parmesan chicken fingers served on three-pepper tomato sauce with spinach and zucchini. The chicken fingers are simply battered in parmesan cheese and almond flour with some spices, first dipped in a mixture of egg and almond milk. Delicious!

Pumpkin Spice Pancakes, and bacon, of course.

I used this recipe here from the blog, "I breath, I'm hungry". I added a 1/2 t of pumpkin spice instead of cinnamon and a t of Trader Joe's pumpkin butter. Amazingly delicious.

Sloppy Joe's, Extra sh-loppy!



Keto Sloppy Joe's with some wilted spinach mixed in. I sort of made up this recipe as I went. I roughly used the following:

1 lb Ground beef
1 T butter
1/2 Sweet onion
3 Cloves garlic
1 T Erythritol
1 T Worcestershire sauce
1/2 c Tomato sauce
2 c Fresh spinach
Salt, pepper, paprika added to taste

Over medium heat in a medium sauce pan melt butter. Add onion, stirring occasionally until translucent. Add garlic. Once the garlic has cooked a bit and the onion is translucent and brown add in the ground beef, breaking up the beef as it cooks. When half browned sprinkle in spices, add tomato sauce and Worcestershire sauce stir thoroughly, add spinach ON TOP ONLY, DO NOT STIR. Cover with lid and let spinach wilt for a few minutes. After spinach has wilted, stir in and add more seasoning if needed.

I also baked some bread for the Joe's to go in.
Almond butter bread, gluten and grain free. (Eventually I want to invest in a muffin-top pan so I can make this into buns.) I used this recipe.


As a snack, I made some almond saltines from this recipe.
Enough food for the entire week!

Chipotle and Monterrey jack cheese chicken sausages stuffed with horseradish mustard and sauerkraut (grandma's!) with a side of brussel sprouts roasted with garlic and thyme, mixed in bacon fat and coconut oil. For frozen brussel sprouts, these turned out really good!
