Colorless, yet still delicious.

Italian sausage in a three cheese alfredo sauce, on top of some noOodles. As a side I have mashed cauliflower with cheddar cheese.

Chipotle and Monterrey jack cheese chicken sausages stuffed with horseradish mustard and sauerkraut (grandma's!) with a side of brussel sprouts roasted with garlic and thyme, mixed in bacon fat and coconut oil. For frozen brussel sprouts, these turned out really good!

No more farts!

Ah, my apartment now smells of delicious pumpkin coconut macaroons. Made from this recipe. I used Libby's canned pumpkin and coconut nectar, they turned out great!
They are going to love these at work tomorrow!

My apartment smells like farts.

So today I left some chicken leg quarters sit in a crock pot for 8 hours, I decided last second to add a bag of frozen broccoli and cauliflower. Bad idea. Not only are they insanely overcooked, my entire apartment smells like farts. At least the chicken tastes really good.

I'm about to make some cookies, so hopefully that'll clear the giant fart smell.

Keto hot cocoa

I'm obsessed with this hot cocoa recipe I found on reddit, I tweaked it a bit.

1 t coconut oil
1 t erythritol (or sugar/sugar substitute)
1-2 t unsweetened cocoa powder
1 c almond milk (almond/coconut milk, or coconut milk, or regular milk)
optional dash of ground clove and cinnamon
optional 1 T heavy cream

In a small saucepan over medium-low heat add coconut oil, let it melt, add erythritol (or sugar/sugar substitute) whisk it into the oil, whisk in unsweetened cocoa (I use Trader Joe's), then add a dash of clove and cinnamon spice and whisk quickly until blended so the cocoa doesn't burn. Slowly add the almond/coconut milk while stirring with whisk until heated. (I sometimes add a T of heavy cream for a creamy flavour.)

Tori's keto chili recipe!

Chili:
1.5 lbs ground beef
1 lb ground pork sausage
1 lb bacon
1 14-16 oz. can crushed tomatoes
1 large onion
3/4 bulb of garlic
2 jalapeƱos
(I added one green bell pepper, 1/2c of GF chicken stock and 1 T of chili powder, and only used a 1/4 lb bacon since that's all I had at hand)

You need a large pot and a large frying pan.
Brown the beef, then add it to the pot, leave the grease.
Brown the pork, then add it to the pot, leave the grease.
Cut the bacon in 1/4 length pieces, cook to crispy, add to pot, leave the grease.
Dice the onions into sections almost as large as the bacon pieces, mince the garlic, carmelize both in the grease(I added the peppers and garlic after the onions cooked a bit). Then add the entire contents of the pan into the pot.
Dice the jalapeƱos and add to the pot (you can cook them with the garlic and onions if you'd like). Add can of crushed tomatoes (and stock, if using)

Heat the pot on low until the meats soften and blend a little, but not too much. Usually simmer for about an hour.
Salt as needed. Serve.
Best keto chili ever. I sometimes add a pinch of black pepper. Goes great with any cheese.

And it was damn good!!

Back tracking..

Here are some delicious things I have eaten over the past year:

I make this almond butter bread, which is the best GF bread I have had thus far. It lasts me for a few weeks (cut into thin slices since it is calorie heavy) and I make a million breakfast sandwiches, like this one pictured.

Collard greens with garlic, butter and thyme butternut squash, and salmon filet with lemon-basil pesto.

My various burgers, burgers for buns, lettuce for buns, and mushrooms for buns, who needs bread!

Keto/low carb style deep dish pizza. Recipe here. It was amazingly delish.

Cream cheese pancakes by "I breathe, I'm hungry", taste very similar to crepes.

Almond biscuits with coconut milk and sausage gravy

Parmesan baked drumsticks and collard greens.

Delicous BBQ pork, coleslaw, and pickles from "The pig" in raleigh, NC.
